What exactly is the coconut coir mat for? The instructions said you should use coconut coir to make the bedding. There was a coconut coir mat and a brick, so I used the mat. I teared it up and mixed with soil. You should explain better, because the instructions were not clear about the difference between the coconut coir mat and the brick.
The coconut fiber mat is placed inside the lid to block the odor in the breeding box from escaping and to prevent small flying insects from entering the breeding box. The coconut bran bricks are soaked and then mixed with soil to serve as the substrate for the initial breeding of insect species.

Because Many insect species, such as earthworms, like alkaline soil, so using coconut bran is currently a low-cost and cost-effective substrate. Coconut bran is not essential. If you can find a suitable substrate for cultivating insect species, choose Other substrates are also available.

Does it get too hot outside? It gets over 100 degrees for several days in a row during summer at my location.
As long as it is not exposed to direct sunlight, it will be fine. If you are raising earthworms, earthworms like heat and are afraid of cold. 100 degrees Fahrenheit is not very hot.

As you stack the trays on top of each other, what keeps the worms from getting out between them
The worms will move between trays. You encourage them to move into a particular tray by putting the food they like there. When they mostly leave the old tray, you can harvest the castings.
