Can multiple fans be hooked up on one dimmer
No. You cannot connect this fan (or multiple fans) to a wall dimmer switch.

Can you program multiple fans to the same remote? Also can you program for the fans to start on high with max cool lighting at every start up?
1. They can be paired with the same transmitter, but the control distance cannot exceed 10 meters;
2. The controller has a memory function. If it was at the highest setting and cold light mode before being turned off by the transmitter, and the power was not interrupted, turning the fan on with the transmitter will then return to the highest setting and cold light mode.
