Great pan, not so great ball valve
I got this pan to improve the speed and efficiency in evaporating maple sap into syrup. Previously I was using the double propane burner pictured along with two restaurant steam table pans. That set up worked but it was painfully slow and wasted allot of propane. I'm happy to say this evaporator pan worked as expected. It cut my time and propane use about in half. One annoying thing is the included ball valve leaks. It releases about one drop every 5 to 10 seconds. You can see a drop ready to fall in the photo. The rate of drip is tolerable but annoying none the less. I'll be buying a better valve.

Well Built
This is a great evaporator. It is well built and perfect for making maple syrup. The only critic is that the drain hole is a little high, so you need to tip up the warm evaporator to drain all the cooked syrup out.

Great evaporator pan for home use
We've been able to get between two and three gallons per hour evaporation using this pan on simple two propane burner setup. Took around 21 hours to do 52 gallons of sap. Expect to switch to wood burner set up instead of propane burners later this season.- Pan was not hard to set up though had some difficulty getting valve on warming tray to stop leaking due to problems with the threads on the warming pan.- Very convenient to have thermometer on side. Able to monitor temperature regularly though it is mounted to high on the side of the pan to determine when sap is ready to draw off to finish in the house.- This is perfect for home use with about 10-15 taps. Pan is thick enough that we don't see any significant scorching.- Need to have flat scoop to get the last of the syrup out of the pan when done as valve is on the side and it is not safe to tip it when hot to get the last of the syrup out.- Bought this to evaporate sap for few trees this year and will convert to finishing pan next as our operation expands.

Came earlier than needed. It was a great price but wrong time of year. Can't wait until sap season to be able to try it out.
