How does the temperature regulation work on these and what turns on and off (e.g. burner, fan, etc?) That is, does it shut down (and then re-light) when necessary, just reduce the fire rate (but keep running), etc? Basically I want to know if I set it to a given temperature will it stop there or just reduce output and potentially overrun?
