Can it cut sausage that is cured which is typically very hard.

I haven't specifically done cured sausages, but I bet it would. Just make sure you grip the sausage with tongs instead of holding it in your hand. It's so strong that if you're holding onto the meat when it grabs it, it could yank your fingers down into it. This cutter is amazing, but it's also the scariest kitchen appliance I've ever owned.
