Can I use this on both my 5hp and 10 HP mother's

The matching of the inverter and the motor has certain requirements, that is, the power of your motor cannot be much smaller than that of the inverter. Suppose you bought a 10hp inverter and the motor power is 5hp to 15hp. If it is too small, the motor will heat up seriously, and if it is too large, the motor will be difficult to start.

Main Service is 120/230V 1/PH. Purchased an Air Compressor 7.5Hp 230V 3/Phase. Looking at the CPS-10Hp 3/Phase Converter. Will this work for this application?

No, the output of the inverter can only be used for three-phase asynchronous motors and cannot be used for any other equipment except three-phase asynchronous motors.

I just got the phase converter for 220-240v and I am running a single pole 30 amp and a neutral leg, to a 3 phase 208v meat grinder. Why can I not get the correct voltage and if you have to use a neutral leg where do I tap in my second hot leg to produce the 240v from the double pole 30 amp receptacle?

You just need to connect the two phase wires to ln. If you are currently using single-phase 110, then two phases will form 220, and the center line does not need to be connected. Then connect the output to the three-phase motor.
