Treat it like any other cast iron skillet or griddle...wipe it clean while it's hot with a damp paper towel if needed...I rarely have to clean mine any more...nothing sticks if I use oil...I just wipe off any excess oil with a paper towel.
No you don't. You simply placexa ball of dough on it (roughly 3/4 at the back) and close it. The action makes a tortilla or bread that is uniformly thick. I made pitta bread or chapatis on mine which I then cook in a pizza oven!
