What size is the mount part? 2inches? Does it fold up when not in use?

There isn't and I haven't used it yet so I cant suggest anything.

Instructors are in the box. I had a fair amount of trial and error with the bolts that the tires rest on once I got it up on the hitch to get it adjusted right for my bike.
