I'm not sure but I use the slicer for bread cheese and meats. We have also cut pork loin that is semi frozen to how thin or thick we need.

No only 1 blade mounted by 3 screws. it is replaceable but I don’t think you can get a 3rd part blade for any other usage.

No but the blade is sharp enough for most applications. I am going to try home made bread today or tomorrow. With that said this machine is the equivalent of one that you find at sub shops, small markets. I am very happy with what I got. I believe you can order the blade may be looking for from the manufacturer. This machine is worth the price for home use! avb
