Has anyone used this for oranges? I was wondering how well it did on those?
If you plan on cutting oranges it will be messy, any fleshy fruit or veggies will be messy.

Is the aluminum touching the food at all?
When using a commercial chopper, you will cut the food product to fit within the chopping blades. So no. The food would not be typicaly contacting anything but the knives and the plastic pusher.

Dimension of the blades ? BLADES ONLY. NOT their metal frame.
Can replacement blade sets be ordered are is the 2 individual replacement blades /set all that's available? If not, can blades be resharpened?
Not sure if they can be ordered. But the kit came with two sets of replacement blades for each size of the sizes.
