I would not recommend it. it will be very unstable.

You could loose the middle shelf, but the top and bottom will give it more stability. With only the top one it won’t be as stable but will still work. It’s a great quality. I have it outside in the elements and it still looks like new.

You need the shelves or it will wobble. At least you should use top and bottom shelves for stability.

Even without the shelves it would be very sturdy. Kind of a waster though? Look for a style without shelves so that you don't pay for them.
