With the shelf in its lowest position what is the distance between it, the the underside of the top? Need to make sure my 120qt pot will fit.
With the adjustable undershelf set to its lowest position, the maximum vertical clearance between the shelf surface and the underside of the top table is 13.4 inches (34 cm).

I’m looking at the 30 x 60 table. Can I get casters for it? If so, do you have ones that would directly fit?
We do offer similar stainless steel work tables that come pre-equipped with casters. We recommend choosing a model that includes casters directly, as we do not offer separate casters that are guaranteed to fit all stationary models.
