There is white insulation where the chimney is screwed onto the pizza oven. Is this supposed to be cut out. It’s about 3/4 inches in thickness.

No, that white insulation is not supposed to be cut out. That material is filler/insulation intended to be there. You should simply remove any loose packing material, install the chimney over it, and leave the insulation in place to help retain heat and protect the surrounding metal.

There is a white cloth inside where the chimney goes. Is that packing material or insulation?
